Slow Cooker Birria Carnivore Tacos

Ingredients

  • 2-3 lbs boneless chuck roast
  • 1 tablespoon tallow, ghee or butter
  • coarse ground salt and fresh ground pepper 
  • 4 dried Guajillo chiles
  • 5-6 Chipotle chilis in adobo (from a can)
  • 1 medium white onion, roughly sliced 
  • 8 whole cloves garlic, smashed 
  • 32 oz beef stock
  • 1 tablespoon tomato paste
  • 1 14.5 oz can Fire roasted diced tomatoes 
  • ¼ cup Apple cider vinegar
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1 cinnamon stick 
  • 3 dry bay leaves
  • 1 teaspoon smoked paprika
  • ½ tablespoon ginger 
  • 1 tsp ground coriander

Carnivore Tortilla

  • 1 egg
  • 1/2 cup shredded cheddar cheese

Combine ingredients & pan fry in butter until crispy

Instructions

Cooking the Beef/Consomé:

1. Heat oil in a cast iron skillet over high heat for 4-5 minutes.

2. Liberally salt and pepper beef, add to hot skillet, and sear on both sides, 5-6 minutes a side.

3. Add beef to slow cooker with remaining ingredients, and stir. Cook on low heat, covered, for 8 hours.

4. After 8 hours, remove beef to a rimmed baking sheet, and shred with 2 forks.

5. Remove bay leaves and cinnamon stick from slow cooker and discard.

6. Using a high powered blender or immersion blender, blend everything until a smooth sauce forms.

7. Transfer sauce back to slow cooker to keep warm.

8. Add 1 ½ to 2 cups of sauce to shredded beef and toss to coat.

Tacos:

1. To one half of the tortilla, add cheese, then meat.

2. Fry 2-3 minutes over medium heat, then flip other side to make a half moon.

3. Add a small ladle of consomé to the top of the tortilla.

4. Flip over, and fry 2-3 minutes more.

Ingredients

  • 1 1/2 cups cheddar cheese (shredded)
  • 12 eggs
  • 1 tsp Garlic Powder
  • 1 tsp Black Pepper

Instructions

  1. Preheat the oven to 350°
  2. Place the shredded cheddar cheese, egg, garlic, and pepper in a bowl.
  3. Mix it together with a whisk or spatula until everything is fully incorporated.
  4. Pour the mixture evenly into 4″ round silicon baking mold.
  5. Bake for 20-25 mins, or until firm and the eggs are set.
  6. Place on my Garlic Parmesan Bacon Chaffles for a Carnivore or Keto Breakfast.

Garlic Parmesan Bacon Chaffles

Ingredients

  • 2 cups cheddar cheese (shredded)
  • 4 eggs
  • 1/4 cup parmesan cheese (shredded)
  • 2 tsp minced garlic
  • 1 tsp sea salt
  • 1 tsp Italian Seasoning
  • 3 strips bacon (crumbled)

Instructions

  1. Place the shredded cheddar cheese, egg, bacon, parmesan cheese, garlic, and salt in a bowl.
  2. Mix it together with a whisk or spatula until everything is fully incorporated.
  3. Heat the waffle maker and spray it with coconut oil.
  4. Pour half of the waffle batter into the waffle maker and close the lid to cook. Cook for 4 minutes then carefully remove from the waffle maker to a plate.
  5. Top with sliced green onions or whatever topping you wish. Use 2 chaffles to make a carnivore or keto sandwich.

Honey Glazed Crispy Pork Belly

HOW TO MAKE CRISPY PORK BELLY

  1. Prepare The Meat. You can keep your pork belly as is, or you can slice it into two 10-inch by 1-inch by 1-inch slabs, depending on its size. To prepare it for cooking, score the skin with crosshatch marks using a sharp knife.
  2. Add The Spice Rub. Place the cumin, smoked paprika, garlic powder, cayenne pepper, and salt in a small bowl and mix. Then, rub the mix all over the pork belly. Make sure to press it so that it adheres to the meat. Wrap it in plastic wrap and refrigerate for at least 30 minutes. If you have time to leave it overnight, all the better!
  3. Roast The Pork Belly. If you did refrigerate the meat overnight, make sure to bring it to room temperature an hour before you roast it. While you wait, preheat your oven to 350°F. Place the pork belly on a baking tray lined with parchment paper. You can also use a deep baking dish. Roast the meat uncovered for 60 minutes with the skin side up.
  4. Make The Glaze. Combine the honey and dry sherry in a small bowl and then baste the meat with it to complete your honey glazed crispy pork belly recipe. Lower the temperature of your oven to 250°F and roast for 20 more minutes. Then, baste the meat once more and cook for 10 minutes.
  5. Slice & Serve. Take your crispy pork belly out of the oven and allow it to cool a bit before slicing. Now you know how to cook pork belly. Enjoy!

  • In a small bowl mix together the spice rub. Rub the spice blend on all sides of the pork belly, pressing to ensure it adheres and is coated. Wrap in plastic wrap and refrigerate for 30 minutes (preferably overnight).
  • If refrigerated over night, place on counter to come to room temperature an hour prior to roasting. Preheat your oven to 350°F. Place pork belly on baking tray lined with parchment or a deep baking dish. Roast uncovered in greased pan for 60 minutes (skin side up).
  • In a small bowl combine honey and dry sherry. Baste pork belly with honey sherry mixture. Drop temperature to 250°F and continue to render for 20 minutes. Baste one more time and continue cooking for 10 more minutes.
  • Allow to cool slightly before slicing.

Pork Belly Burnt Ends – Keto & Carnivore Friendly!

Ingredients

  • 2 pounds Pork Belly Cut into 1 1/2-2 inch pieces
  • 2 tbsp Olive Oil
  • 1 tbsp Chili Powder
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1/4 cup Keto or Carnivore BBQ Sauce

Instructions

  1. Preheat the oven to 275 degrees.
  2. Add the pork belly pieces to a large mixing bowl, and drizzle with the olive oil.
  3. Place the chili powder, garlic powder, onion powder and salt and pepper to taste to the bowl. Toss to combine and coat well.
  4. Spread the seasoned pieces onto a rack on a baking sheet lined with aluminum foil.
  5. Bake for 3 hours.
  6. Remove the pork belly pieces from the oven, and place into a casserole dish.
  7. Mix the bbq sauce with the pork belly pieces, and cover with aluminum foil. Bake another 30 minutes.
  8. Remove the foil, and raise the oven temperature to 350 degrees.
  9. Bake for another 30 minutes, to an hour until the bites are well glazed.
