Steak with Roquefort Cheese Sauce

Introduction: If you’re looking to elevate your steak game, this Steak with Roquefort Cheese Sauce is a must-try. The creamy, tangy Roquefort sauce perfectly complements the rich flavor of a perfectly cooked steak. It’s a delightful combination that will impress your taste buds and your guests. Let’s dive into this delicious recipe!

Ingredients:

  • 1 tablespoon unsalted butter
  • 1/4 cup heavy cream
  • 4 ounces Roquefort cheese, room temperature
  • Kosher salt
  • Fresh cracked black pepper

Instructions:

1. Prepare the Roquefort Cheese Sauce:

  • In a heavy-bottomed saucepan, combine the unsalted butter and heavy cream.
  • Over medium heat, bring the mixture to a low boil. Be sure to watch closely to prevent burning.

2. Reduce Heat and Thicken:

  • Once it starts to boil, reduce the heat to low.
  • Stir the mixture continuously until it slightly reduces, which should take about 3 minutes.
  • Remove the saucepan from the heat.

3. Incorporate the Roquefort Cheese:

  • Add half of the Roquefort cheese to the sauce.
  • Stir vigorously until the cheese is fully melted and the sauce becomes smooth.

4. Cool Slightly:

  • Allow the sauce to cool slightly. This will help it thicken up a bit.

5. Add More Cheese and Fold:

  • Crumble in the remaining Roquefort cheese into the sauce.
  • Gently fold the cheese into the sauce. You want the sauce to have a thick and chunky texture. The remaining cheese should be visible and add a delightful texture to the sauce.

6. Season with Salt and Pepper:

  • Taste the sauce and season with kosher salt and freshly cracked black pepper to your liking. Roquefort cheese can be quite salty, so be cautious with the salt.

7. Serve with Steaks:

  • Grill, pan-sear, or cook your favorite steaks to your desired doneness.
  • Once the steaks are ready, drizzle the creamy Roquefort sauce generously over the top.

8. Enjoy:

  • Serve your succulent steaks with the Roquefort cheese sauce immediately while everything is still warm.
  • Watch as your guests savor every bite of this delectable combination.

This Steak with Roquefort Cheese Sauce is a restaurant-quality dish that you can easily prepare at home. It’s perfect for special occasions or whenever you want to treat yourself to a gourmet meal. Garlic and Herb Roasted Boneless Leg of Lamb with Pan Sauce

Boneless Leg of Lamb:

Ingredients:

  • 1 5-lb Boneless leg of lamb
  • 5 tsp Sea salt (or 1 teaspoon salt per pound)
  • 1 1/4 tsp Black pepper (or 1/4 teaspoon pepper per pound)
  • 2 tbsp Olive oil
  • 5 cloves Garlic (crushed)
  • 2 tbsp Fresh rosemary (chopped)
  • 2 tbsp Fresh thyme (chopped)
  • 1 tbsp Lemon zest (from 1 lemon)

Instructions:

  1. Begin by tying kitchen twine around the leg of lamb at 1-inch intervals. This will help the lamb maintain its shape while roasting.
  2. Place the lamb in a roasting pan and generously season it with salt and pepper. Allow it to sit at room temperature for 1 hour, which will help the flavors penetrate the meat.
  3. Preheat your oven to 400 degrees F (204 degrees C).
  4. In a small bowl, combine the olive oil, crushed garlic, chopped rosemary, thyme, and lemon zest. This fragrant mixture will be your seasoning rub. Rub it evenly all over the lamb, ensuring it’s well coated.
  5. Place the seasoned boneless leg of lamb in the preheated oven and roast until it reaches your desired level of doneness. For rare, aim for an internal temperature of 115 degrees F (about 70-75 minutes). For medium-rare, target 125 degrees F (about 80-85 minutes), or for medium, go for 135 degrees F (about 90-95 minutes).
  6. Once the lamb has reached the desired temperature, remove it from the oven and transfer it to a cutting board. Cover it loosely with aluminum foil and let it rest for 15-20 minutes. This resting period is crucial to let the juices settle, and the internal temperature will rise by about 10 degrees during this time.
  7. After resting, slice the Garlic and Herb Roasted Boneless Leg of Lamb against the grain to serve.

Pan Sauce:

Ingredients:

  • 1 cup dry red wine or water
  • 1 cup chicken stock or reduced-sodium canned broth
  • ½ teaspoon salt (adjust to taste)

Directions:

  1. While the lamb is resting, you can prepare the savory pan sauce to elevate the dish.
  2. Pour the dry red wine (or water) into the roasting pan in which the lamb was cooked. Place the pan over medium heat and use a spatula to scrape up any browned bits from the bottom.
  3. Add the chicken stock and salt to the pan, bringing the mixture to a simmer. Cook and stir occasionally until the liquid has reduced to approximately 1 1/2 cups, which should take about 10 minutes. If there’s excess fat on the surface, you can skim it off as needed.
  4. Once the sauce has reached the desired consistency and flavor, strain it into a gravy boat or serving dish to remove any remaining solids and achieve a smooth texture.
  5. Serve the hot pan sauce alongside the sliced Garlic and Herb Roasted Boneless Leg of Lamb to enhance the dining experience.

Ingredients:

  1. 2 eggs
  2. 1 cup shredded cheese
  3. 1 cup Heavy Whipping Cream
  4. 1 cup Strawberries (sliced)

Directions:

1. Prepare the Chaffles

Start by preheating your waffle iron. While it’s heating up, let’s prepare the chaffle batter.

  • In a mixing bowl, whisk the two eggs until they are well beaten.
  • Add the shredded cheese to the eggs and mix thoroughly until you have a consistent batter.
  • Once your waffle iron is hot and ready, grease it lightly if necessary (some waffle irons don’t require greasing due to the cheese in the batter).
  • Pour the chaffle batter into the waffle iron, making sure not to overfill. Close the lid and cook until the chaffles are golden and crispy on the outside. This usually takes about 3-5 minutes, but cooking times may vary depending on your waffle iron.

2. Prepare the Strawberries & Cream

While your chaffles are cooking, let’s whip up some delicious Strawberries & Cream.

  • Begin by placing a mixing bowl and the whisks (or beaters) of a hand mixer in the freezer for about 20 minutes. This step will help the cream whip up nicely.
  • After 20 minutes, remove the bowl and whisks from the freezer and pour in the Heavy Whipping Cream.
  • Using your hand mixer, whip the cream on high speed until stiff peaks form. This might take a few minutes, so be patient. You’ll know it’s ready when the cream holds its shape.

3. Assemble and Serve

  • Once your chaffles are ready, carefully remove them from the waffle iron.
  • Place them on a serving plate.
  • Top your warm chaffles with the sliced strawberries, letting the juicy goodness soak into the crispy chaffle squares.
  • Finally, generously spoon the freshly whipped cream over the strawberries, creating a luscious, creamy topping.
