Each bite is a delightful explosion of rich, juicy flavors that will satisfy your burger cravings with a unique kabob presentation. Whether you’re grilling for a special occasion or just looking to elevate your BBQ game, these kabobs are sure to impress your guests and delight your taste buds. Let’s dive into the steps to create these delectable Bacon-Wrapped Juicy Lucy Kabobs.

Ingredients:

  • 1 lb ground beef (80% lean)
  • 3 slices of your favorite cheese (e.g., cheddar, pepper jack, or American)
  • 6 slices of bacon
  • Salt and pepper, to taste
  • Wooden or metal skewers

Instructions:

  1. Prepare the Ground Beef:
    • Divide the 1 lb of ground beef into three equal portions. You’ll use one portion for each kabob.
  2. Shape the Beef Patties:
    • Take each portion of ground beef and shape it into an oblong, flat patty. The patties should be large enough to wrap around the cheese slice and enclose it completely.
  3. Add Cheese:
    • Place a slice of cheese in the center of each oblong beef patty.
  4. Enclose the Cheese:
    • Carefully fold the beef patty around the cheese slice, ensuring the cheese is completely enclosed. Mold the beef into an oblong shape with the cheese in the center.
  5. Prepare the Skewers:
    • Thread the beef and cheese-stuffed oblong patties onto wooden or metal skewers. Push the skewer through the center of each patty.
  6. Season:
    • Season the kabobs with salt and pepper to taste. You can also add your preferred seasoning or spices for extra flavor.
  7. Cook on Grill:
    • Preheat your grill to medium-high heat.
  8. Initial Grilling:
    • Place the beef and cheese-stuffed oblong patties on the grill. Cook them until they are brown on the outside and have grill marks, approximately 3-4 minutes per side. This initial grilling helps seal the beef and give it a nice crust.
  9. Wrap with Bacon:
    • While the beef patties are grilling, partially cook the bacon slices. They should be slightly cooked but still pliable. You can do this in a separate pan or on the grill itself.
  10. Wrap with Bacon:
    • Take the partially cooked bacon slices and wrap one or two slices around each grilled beef patty, securing them with toothpicks if needed.
  11. Finish on Grill:
    • Place the bacon-wrapped oblong patties back on the grill. Continue cooking until the bacon is crispy, and the beef is cooked to your desired level of doneness, about 3-4 minutes per side.
  12. Serve:
    • Remove the kabobs from the grill, and let them rest for a few minutes before serving. The cheese inside should be melty and delicious.

Serve your Bacon-Wrapped Juicy Lucy Kabobs with your favorite condiments and sides. Enjoy your flavorful twist on the classic Juicy Lucy burger in kabob form!

  • Pepper, to taste (about 1/2 teaspoon)

For the Grilled Garlic Lemon Butter Lobster Tail:

  • 4 lobster tails
  • 1/2 cup (1 stick) unsalted butter
  • 4 cloves garlic, minced
  • Zest of 1 lemon
  • Juice of 1 lemon
  • Salt and pepper, to taste

Instructions:

Marinated Flank Steak:

  1. In a bowl, whisk together the olive oil, minced garlic, red wine vinegar, coconut aminos, honey, and freshly ground black pepper to create the marinade.
  2. Place the flank steak in a resealable plastic bag or a shallow dish and pour the marinade over it. Seal the bag or cover the dish and refrigerate for at least 2 hours or overnight, turning the steak occasionally to ensure even marination.
  3. Preheat your grill to medium-high heat. Remove the flank steak from the marinade and let any excess drip off. Season with coarse salt and freshly ground black pepper if desired.
  4. Grill the steak for about 4-5 minutes per side for medium-rare, or adjust the cooking time to your preferred level of doneness. Let the steak rest for a few minutes before slicing it thinly against the grain.

Chimichurri:

  1. In a bowl, combine the olive oil, red wine vinegar, chopped parsley, minced garlic, chopped red chilies, dried oregano, coarse salt, and pepper. Mix well.
  2. Allow the chimichurri to sit for at least 30 minutes before serving to allow the flavors to meld together.

Grilled Garlic Lemon Butter Lobster Tail:

  1. Preheat your grill to medium-high heat.
  2. Using kitchen shears, cut the top shell of each lobster tail lengthwise down the center, leaving the tail intact. Gently lift the lobster meat from the shells and place it on top.
  3. In a small saucepan or on the grill side burner, melt the butter. Add the minced garlic, lemon zest, and lemon juice. Season with salt and pepper to taste. Stir until well combined.
  4. Brush the garlic lemon butter mixture over the lobster tails.
  5. Grill the lobster tails meat-side down for about 5-7 minutes, basting with the garlic lemon butter mixture, until the lobster meat is opaque and the shells turn red.

To Serve:

Serve the thinly sliced Marinated Grilled Flank Steak with a generous drizzle of Chimichurri sauce alongside the Grilled Garlic Lemon Butter Lobster Tail. This combination of flavors will make for a memorable and delicious meal. Enjoy!

Ingredients:

  • 2 lbs Boneless Skinless Chicken Thighs
  • Salt & Pepper to taste

Garlic & Herb Butter:

  • 4 tbsp Butter (softened)
  • 2 tsp Fresh Rosemary (chopped)
  • 1 tsp Fresh Thyme (chopped)
  • 4 Garlic Cloves (minced)

Instructions:

  1. Begin by preparing the Garlic & Herb Butter. In a small bowl, combine the softened butter, chopped fresh rosemary, chopped fresh thyme, and minced garlic cloves. Mix well until all the ingredients are thoroughly incorporated. Set the butter aside.
  2. Now, it’s time to prepare the chicken. Start by cutting and trimming the boneless, skinless chicken thighs into 1-inch cubes. Season them generously with salt and pepper to taste.
  3. Thread the seasoned chicken cubes onto skewers. Make sure to leave a small space between each piece for even cooking.
  4. Preheat your grill to medium-high heat. Make sure the grill grates are clean and lightly oiled to prevent sticking.
  5. Place the chicken skewers on the preheated grill. Grill the chicken for about 4-5 minutes on each side, or until they are fully cooked and have a nice char on the outside. Cooking times may vary depending on the thickness of the chicken cubes and the heat of your grill, so be sure to use a meat thermometer to ensure they reach an internal temperature of 165°F (74°C).
  6. Once the chicken is almost done, start brushing the Garlic & Herb Butter mixture generously onto the skewers. Allow the butter to melt and infuse the chicken with its delicious flavors as you continue to grill for another minute or two, turning the skewers as needed.
  7. Remove the chicken skewers from the grill when they are cooked through and have a beautiful golden-brown color. Be sure not to overcook to keep the chicken juicy and tender.
  8. Serve your Garlic & Herb Buttered Chicken Skewers hot, garnished with additional fresh herbs if desired. They pair wonderfully with a side salad or some grilled vegetables for a complete meal.
