Ingredients:

For the filling:

  • 1 lb ground beef
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 2 oz cheese, shredded

For the shell:

  • 2 eggs
  • 2 tbsp butter, melted
  • 2 tbsp unflavored protein powder
  • 2/3 cup pork rinds, crushed

Instructions:

  1. Prepare the ground beef filling: In a skillet over medium heat, cook the ground beef until browned and fully cooked. Season with paprika, chili powder, salt, black pepper and garlic powder. Adjust seasoning to taste. Set aside.
  2. Prepare the taco shells: In a mixing bowl, whisk together the eggs, melted butter, and unflavored protein powder until well combined. Stir in the crushed pork rinds until the mixture forms a thick batter-like consistency.
  3. Heat a skillet over medium heat and lightly grease it with butter.
  4. Spoon the batter onto the skillet, spreading it out into a thin, circular shape to form a taco shell. Cook for 2-3 minutes on each side until golden brown and firm.
  5. Once the shell is cooked, sprinkle some shredded cheese onto one half of the shell while it’s still in the skillet. Allow the cheese to melt slightly.
  6. Carefully fold the shell over the cheese to create a taco shape. Press down gently with a spatula to seal the edges.
  7. Remove the taco shell from the skillet and let it cool slightly on a plate. Once cooled slightly, carefully pull apart the taco shell to create a pocket.
  8. Stuff the taco shell with the seasoned ground beef filling.
